1. In a roasting pan place the roast with the fatty side up.
2. Mix together the garlic, olive oil, salt, pepper and thyme in a small bowl.
3. Spread the mixture over the fatty layer of the roast.
4. Let the roast sit out until it is at room temperature for one hour and no longer.
5. Preheat the oven to 500 degrees.
6. Bake the roast for 20 minutes in the preheated oven.
7. Reduce the temperature to 325 degrees and continue roasting for an additional 60 to 75 minutes.
8. The internal temperature of the roast should be at 145 degrees for medium rare.
9. Allow the roast to rest for 10 or 15 minutes before carving so the meat can retain its juices.
