Fiesta Beef Soup

 
Ingredients -
1/2 Pound Lean Ground Beef
1/2 Yellow Onion, finely chopped
1 Clove Garlic, minced
1 Teaspoon Ground cumin
1 Can Black, (15 ounce), undrained
1 Can Petite Cut Diced Tomatoes with Jalapenos, (14.5 ounce), undrained
3 Cups Beef Broth
1 Can Whole Kernel Golden Sweet Corn, (8 3/4 ounce), undrained
1/4 Cup cilantro, chopped
Tortilla Chips, broken, for garnish
Cheddar Cheese, shredded, for garnish
 
Preparation:

1. In a 4 quart sauce pan brown the meat with the yellow onion, garlic and cumin.

2. Drain.

3. Season to taste with salt and pepper.

4. Stir in the beans, tomatoes, broth, corn and cilantro.

5. Cook over medium heat for 10 minutes.

6. Serve with hot sauce and garnish with broken tortilla chips and shredded Cheddar cheese, if desired.

Fat Content of Ground Beef
There are different fat contents of ground beef available. Anywhere from 30% fat to 5% fat is seen in stores. 30% fat is the maximum amount allowed by law. A fattier cut will give you a juicier, more flavorful dish. However they are also less healthy.
