Curry Pepper Steak With Sweet Potatoes

Seasoned top round steak sauteed with onions, green peppers, sweet potatoes, curry powder, ground ginger, and red pepper.
Ingredients -
3 tablespoons Vegetable Oil
1 pound Beef Top Round Steak, cut across grain 1/4 inch thick
1-1/4 teaspoon Salt
2 Sweet Green Peppers, seeded, cut in 1/2 inch thick strips
2 Sweet Potatoes, peeled, quartered lengthwise, sliced crosswise 1/4 inch thick
1 large Onion, thinly sliced
1/2 teaspoon Curry Powder
1/4 teaspoon Ground Ginger
1/8 teaspoon Ground Red Pepper
1/2 cup Water
 
Preparation:

1. Heat 2 tablespoons vegetable oil in large skillet.

2. Season top round steak with ¼ teaspoon salt.

3. Saute steak 2 minutes per side.

4. Remove steak from skillet. Keep warm

5. Add remaining oil to skillet.

6. Saute green peppers, sweet potatoes, and onion in oil for 6 minutes.

7. Stir in curry powder, ground ginger, red pepper, remaining salt.

8. Saute 2 minutes.

9. Add water, cover skillet, and saute 5 minutes. Return meat to skillet and heat through.

10. Serve.

Sweet Potatoes
Avoid bruising sweet potatoes by handling carefully. Store sweet potatoes in a cool, dry location, do not refrigerate.

Marinating
Marinate tough cuts of beef overnight to tenderize and turn lesser expensive pieces of beef into delicious beef dishes. Some marinades will tenderize the beef without significantly affecting flavor.
